運営しております、TOKYO COFFEE ROASTERYカフェとTOKYO COFFEE TACHIKAWAの２店舗で販売しているコーヒー豆が２週間以内で販売されない商品は、捨てていました！（アマゾンに納品しているコーヒー前に関しては、60日以上保管されている商品は破棄しておりました。）

ただ、それはもったいないので、少し安めにお客様にオーガニックのコーヒー豆をご提供出来ないかとスタッフで話し合ったところ、本商品が生まれました！

商品によっては、当日に焙煎された商品もあります！

その理由は「焙煎士のミス」、「ブレンドの比率に間違い」や「欠品豆の使用」でしたり、「焙煎度合いが良くなかった」などと、必ずしも、「古い」コーヒーとは限りません。

ただ、一つ言えるのは、「訳あり」だと言う事です。

味の統一性や、「訳ありの深煎りを注文したのに、しっかりと「深煎り」になってないない」などと、ごもっともな意見をいただきますが、仰る通り、「訳あり」だからです。

At TOKYO COFFEE, we have an unwavering commitment to "freshly roasted" coffee!

Previously, coffee beans sold at our two locations—TOKYO COFFEE ROASTERY Café and TOKYO COFFEE TACHIKAWA—that weren’t sold within two weeks were discarded. (For coffee supplied to Amazon, any stock stored for over 60 days was also discarded.)

However, we felt this was wasteful. After discussions among our staff, we came up with the idea to offer these organic coffee beans to our customers at a slightly lower price, giving birth to this product!

The Concept of ECO by TOKYO COFFEE Simply put, "Eco"—the ultimate "ECO." Food waste, air pollution, and soil contamination from chemical fertilizers are just some of the major challenges we face today. "ECO by TOKYO COFFEE" is one way we confront these issues in our own way. To begin with, TOKYO COFFEE never uses non-organic coffee beans that contribute to the growing problem of soil contamination.

However, one of TOKYO COFFEE’s core concepts and a major point of pride is our commitment to "freshly roasted" coffee. Our mission is to deliver only fresh, organic coffee to customers who seek it. But if this commitment leads to food waste, it defeats the purpose! So, inspired by the trend of "aged coffee," we launched the ECO brand to provide high-quality, JAS-certified organic beans to customers who aren’t particular about freshness.

Some products may even include beans roasted on the same day!

The reasons for these beans being "imperfect" include "roaster’s errors," "mistakes in blend ratios," "use of defective beans," or "suboptimal roasting levels." This means they’re not necessarily "old" coffee beans.

However, one thing is certain: these are "imperfect" beans.

We understand that some customers may rightfully point out issues like inconsistent flavors or receiving beans that aren’t quite "dark roast" despite ordering them. But, as the name suggests, these are "imperfect" for a reason.
